Low calorie banana bread recipe

This low calorie banana bread recipe is full of potassium and fibre thanks to the bananas, but it is amazingly moist and so much like a traditional Banana Bread that you won’t be able to tell that it is actually lower in fat and calories.


  • 3 Ripe Bananas Mashed
  • ¼ Cup Coconut Oil
  • 1 Cup Splenda
  • 1 Cup All Purpose Flour (sifted)
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Vanilla Extract


  1. Preheat oven to 375 degrees.
  2. Spray loaf pan or muffin tin with nonstick cooking spray.
  3. In a large bowl beat together bananas, coconut oil and Splenda until well mixed. Add in sifted flour and baking soda until just moistened.
  4. Mix in vanilla and pour into already sprayed loaf pan or muffin tin (if making muffins spoon until each tin is approximately ¾ full)
  5. Bake at 375 degrees for 35-40 minutes if loaf and 20-25 minutes if muffins. Cook times may vary slightly depending on type of pan (glass or metal) and individual ovens.
