Beef burgers are loved by most people. The problem with them is that they are very fattening. This is because they are normally fried and beef is high in fat. Turkey burgers are made from much leaner meat which means that they are much less fattening.
Not only is turkey meat lean, but it is also a good source of protein. Ground turkey also includes minerals and vitamins such as vitamin B6.

Turkey Burgers
1 lb ground turkey
1 medium carrot shredded
1/3 cup sun-dried tomatoes finely chopped
2 oz soft goat cheese crumbled
1 garlic clove minced
1/4 tsp salt
1/4 tsp black pepper
4 whole-wheat buns halved
4 thick slices of tomato
Pumpkin Seed Pesto
3 cups rocket
1/4 cup unsalted roasted pumpkin seeds
1/4 cup Parmesan cheese grated
1 garlic clove minced
1/2 lemon juiced
1/4 tsp salt
3 tbsp extra virgin olive oil
Turkey Burgers
Build a medium-hot fire in a charcoal grill or heat a gas grill to medium-high. Grease grill grates.
In a large bowl, gently mix together turkey, carrot, sun-dried tomatoes, goat cheese, garlic, salt and pepper. Form burger mixture into 4 patties. Place burgers on grill; cook for 5 to 6 minutes per side or until an internal temperature of 165°F is reached. Remove burgers from the grill. Place bun halves on grill and heat until toasted, about 20 seconds.
Pumpkin Seed Pesto
In a food processor, blend together arugula, pumpkin seeds, Parmesan cheese, garlic, lemon juice and salt. With the machine running, drizzle oil through top tube.
Serve burgers on buns topped with pesto and tomato slices.
