1 small Romaine lettuce or mixed salad leaves
1 cucumber, sliced lengthways and chopped
2 medium tomatoes, roughly chopped
1 yellow pepper, deseeded and sliced
½ red pepper, deseeded and sliced
75g black olives, pitted and sliced
75g green olives, pitted and sliced
200g feta cheese, cubed
A small handful of fresh basil leaves
4 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 garlic clove, finely grated
1 tsp dried oregano
Freshly ground black pepper, to taste
Pinch of sea salt
Prepare the vegetables:
Wash and dry the lettuce or mixed leaves and tear into bite-sized pieces. Place in a large salad bowl.
Add the cucumber, tomatoes, peppers, and olives to the bowl.
Scatter the cubed feta cheese over the top.
Make the dressing:
In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt and black pepper until well combined.
Pour the dressing over the salad and toss gently to coat all the ingredients.
Garnish with fresh basil leaves and serve immediately.
