These classic fluffy pancakes by Gordon Ramsay are delicious pancakes with a sweet honeycomb treat. This recipe is so easy, and so delicious, you have to try it.

Ingredients

  • 4 eggs, separated

  • 2 tsp caster sugar

  • ½ tsp salt

  • 4 tsp baking powder

  • 4 tsp 120g vegetable oil

  • 600g buttermilk

  • 320g plain flour

  • 2 tsp vanilla essence

  • 7g unsalted butter

  • 100g honeycomb, broken up

  • 1 ripe banana, sliced Icing sugar to dust

  • Maple syrup to serve

Method

  1. Whisk the egg yolks until pale and fluffy. Mix in the remaining ingredients. Fold in the egg whites and refrigerate until needed.

  2. Heat a non-stick frying pan on medium heat and add a knob of butter and melt.

  3. Add a ladle of pancake batter and fry until small bubbles rise to the surface. Flip over and cook until both sides are golden brown. Repeat.

  4. Serve by garnishing with the sliced banana and dusting of icing sugar.

  5. Use a blowtorch to caramelize the banana and drizzle with maple syrup.
